Mom's Egg Salad recipe
Ingredients
Directions
Put the eggs in a pot of water and bring to the boil. If the water is boiling give it 8 more minutes.
When done, put the pot under running cold water and set aside to cool the eggs for a bit so you can handle them.
In the mean while add salt, black pepper, curry powder and sugar to a bowl. Than add a bit of oil and vinegar, finely diced onions and the moyonaise. Combine and let it rest so nice aroma's can form. The dry ingredients go in first to prevent lumps from forming.
Peel and dice the eggs while still luke warm. Add the eggs to the saus and fold it in slowly. Do this to hard and the eggs will break and crumble making it look messy. Let it rest for atleast 30 minutes. Serve when it is still a bit warm.
